Grill Salt

This is actually more a suggestion than an actual recipe. As you’ll see, there’s nothing to the actual preparation, which is the entire point because this condiment is something I want to be able to whip up at any time—because it can be used just about any time. Sprinkle it on meat and veggies to enrich a smoky, savory flavor.


Ingredients

½ cup kosher salt 

½ cup fresh ground black pepper

¼ cup granulated garlic 

2 tablespoons onion powder 

1 teaspoon dried thyme 


Step 1

This is optional, but I always roast whole peppercorns on medium heat using a dry pan for a few minutes until they release their natural oils. Then, I pulverize them in a herb grinder or mortar and pestle. Flavor-wise, it makes a world of difference.
